My dinner was not nearly as interesting....I made a two egg omelet w/ colby jack, monterrey jack, American, mozzerella, and salsa....accompanied with peanut butter smothered saltines LOL :D

Apparently my Kool-Aid ruined over the past months.....so I poured it out

I had a head of cauliflower that I wanted to cook before it went bad so last night I made a casserole with it. Even my two boys who said they don't like cauliflower said it tasted really good. I followed the recipe below and it turned out to be simple and very tasty:

I didn't have Gruyere cheese so I substituted Monterey Jack, and I used Progresso Italian bread crumbs instead of making my own....worked great.

Ingredients
1 (3-pound) head cauliflower, cut into large florets
Kosher salt
4 tablespoons (1/2 stick) unsalted butter, divided
3 tablespoons all-purpose flour
2 cups hot milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon grated nutmeg
3/4 cup freshly grated Gruyere, divided
1/2 cup freshly grated Parmesan
1/4 cup fresh bread crumbs

Directions
Preheat the oven to 375 degrees F.

Cook the cauliflower florets in a large pot of boiling salted water for 5 to 6 minutes, until tender but still firm. Drain.

Meanwhile, melt 2 tablespoons of the butter in a medium saucepan over low heat. Add the flour, stirring constantly with a wooden spoon for 2 minutes. Pour the hot milk into the butter-flour mixture and stir until it comes to a boil. Boil, whisking constantly, for 1 minute, or until thickened. Off the heat, add 1 teaspoon of salt, the pepper, nutmeg, 1/2 cup of the Gruyere, and the Parmesan.

Pour 1/3 of the sauce on the bottom of an 8 by 11 by 2-inch baking dish. Place the drained cauliflower on top and then spread the rest of the sauce evenly on top. Combine the bread crumbs with the remaining 1/4 cup of Gruyere and sprinkle on top. Melt the remaining 2 tablespoons of butter and drizzle over the gratin. Sprinkle with salt and pepper. Bake for 25 to 30 minutes, until the top is browned. Serve hot or at room temperature.

This monstrosity was born from inspiration by the "Animal Style" fries at In N Out. Hot dog, homefries, grilled onions, sauteed onions, thousand island dressing, shredded and sliced american cheese. This is why your arteries are clogged, indeed.

Planters Brittle Nut Medley - that is really good but I think they only make it for Christmas - and Jim Beam - they make that all year.

I'm cooking a Boston Market chicken pot pie, that I found in my freezer. Cooking it in the oven is so much better!

Poppinjay 01-02-2010 10:39 AM

I'm at work and I keep snarfing leftover Christmas cupcakes.

omg *drool*

I love meat. Go on, let your mind get ugly.

I can't leave Pringles alone lately. I keep buying cans of them. The loaded potato or the mozzarella stick flavors. Gots to stop. *shoves 2 in face*

Ratman 01-07-2010 08:06 AM

A while back I found a place in Japan online called The Meat Guy. I can get a 1kg brined brisket that I can braise (corned beef) or smoke (pastrami). Plus just about anything else. A godsend in a country with no delis!

Zeraph 01-10-2010 12:23 PM

Not this second, but I ate chicken feat! Wasn't too bad, not much substance though. Basically skin and bone.

noodle 01-10-2010 12:29 PM

I just had a three egg omlette with fresh wilted spinach and asiago cheese, fresh fruit, and cheese grits. Man, only about 5 bites of cheese grits, but DAMN were they good.

amonkie 01-10-2010 12:47 PM

Rye bread and Jalepeno Hummus

It was horrid. Undercooked duck breast. I'd never had duck before. And won't again.

Grasshopper Green 01-11-2010 05:29 PM

I just ate a homemade banana muffin. It was delicious.

Noodle, please don't let one poor preparation sway you from trying duck again. It can be quite delicious!

We just ate a sandwich with portabella mushrooms, avocado, melted swiss, and spice mustard on sourdough. With a side of tomato corn salad made with garlic, fresh basil and a drizzle of sesame oil. Hooray for trying to eat healthy!

evilbeefchan 01-16-2010 12:33 AM

Starkizzer speaks the truth, duck is awesome! If you can find a place with Peking duck, go for it!!

Had the LA DIABLA torta from Cook's Tortas in Monterey Park
Grilled Chicken, jalapenos, chile de arbol, habanero guacamole, grilled cheese, black beans

Now eating a Red Delicious apple.

MissTiger 01-24-2010 11:23 AM

Some leftover pasta. So exciting. :P

Borla 01-24-2010 11:59 AM

OMG I want duck. There is a restaurant here that makes a seared duck breast that's been rubbed with five spice...yum yum yum. One of the best dishes I've ever eaten.

Right now I'm just having a piece of sourdough bread. Really good sourdough bread though...from the same restaurant that makes the awesome duck.
