Well I made chicken stuffed with basil and garlic cooked in a cast iron skillet in the oven with sauteed mushrooms and spinach over sesame rice topped with some plain yogurt with dill and lime juice mixed in. Oh and roasted cherry tomatoes. mmmm yummy!

I don't have a digital camera, so no pics of food. They were just box brownies (I was feeling lazy) but I do want to try out a couple of brownie recipes I've come across lately, especially one that includes brown sugar in place of white.

ryfo 01-03-2009 09:47 PM

peanuts from the shell.. BTW can anyone tell me what 'grits' are. I watched an Oprah show and they were mentioned but maybe it cos I am Australian but I have never seen them or have any idea what they are Thanx guys

im2smrt4u 01-03-2009 11:13 PM

The chicken was really, really good. Plus, we determined it cost about $8 to make both servings. Not bad.

Now, to curb late night hunger, we are eating apples. New Year's resolution to loose weight means no more late night Del Taco runs. :(

Grits are a horrid porridge from the Southern states of the USA. They are made from corn ground up. They are absolutely tasteless, gritty and yet disgustingly smooth, and for some strange reason are always served with vast amounts of animal fat, whether it be butter, gravy, or bacon. And salt.

I stir rasberry preserves into mine when I must eat them.

Loading them up with something is the only way to make them somewhat palatable.

I'm not eating anything right now but after reading the bacon thread in Nonsense, I have a feeling I'll be having bacon (turkey) for breakfast.

ryfo 01-04-2009 11:14 AM

Thanks Hrandani, I now know. I might skip that culinary experience.

i just finished 3-peppercorn fettucini with a goat cheese cream sauce (the secret is cooking garlic in white wine and using only a little cream) with some haddock fried in cornmeal and chopped toasted pecans.

it was very nice.
the seafood in this area is ridiculously good.

I'm gnawing on some pomegranate. I figure you burn as many calories trying to get the good stuff off the seeds and them spitting them out as there are in the actual pom whatever-you-call-them.

And, my grits rock.

Maybe I should have emphasized posting pics of what your eating. More pics guys, pictures of food are always a bonus along with the description. :D I was hoping this would turn into something like the "post yourself right effing now" thread.

Tonight was another night of our trying to eat healthier for our new years resolution.

I made wheat penne pasta topped with red bell peppers, zucchini, cherry tomatoes and chicken breast all cooked in a cast iron skillet in the oven. Made a sauce from chicken broth, mushrooms, pinenuts, jalepeno, and basil with green onions.

How so? I mean, raisin bran is raisin bran... and as long as it's Total you don't have to eat 16 bowls.

The flakes are bigger and don't go mushy. The raisins aren't coated in a crap load of sugar and it has a kind of nutty flavor. Its just better to me, my own opinion I guess.

Did you just swap in the prociutto for pancetta in the standard recipe? I would have guessed that the prosciutto would be a bit too delicate. Or did you play with the formula?
