We had tortellini with spinach, yellow bell peppers, edamame, fresh basil, garlic, shrimp and Anaheim chilies. Felt to lazy to take a picture, but I can tell you from the empty plates it was pretty good.

2 cups diced potatoes
3 cups frozen mixed vegetables
1 1/3 cup water
1 packet McCormicks seasoning
Slow cook on low 8 hrs

I went to Whole Foods, so I just finished some Buffalo Garlic Tofu, Tofu and Brown RIce (indian style), Gouda and Roasted Tomato Pasta Salad with artichoke hearts, Kung Pao Tofu and Mushroom Tofu Salad. Obviously, I suck at cooking tofu, so when I crave it, I go there.

hey, that's what I had for early dinner yesterday. I quarter them, then steam lightly, then with good hot olive oil in a frying pan I dump them in until some get slightly browned at the edges, throw in a pinch of minced garlic, then salt & pepper and wolf it down. mon petit chou!

right this effin' second...takes break to stuff mouth again...I'm eating an orzo veggie salad I just made and it's very good. Excuse the crappy color in this cell phone pic. I parboiled some eggplant, then roasted it, then roasted some pine nuts, then mixed that with the cooked orzo and chopped scallions tossed with some good olive oil and feta cheese pieces.

Probably the best fried chicken my wife has ever cooked. Or it could be I am really hungry. I didn't even heat it. If fried chicken is right it is just as good right out of the refrigerator. Frying chicken may not be as healthy but it a form of art.
