1 pkg Penne Pasta (though, any Pasta of choice would work)

1 pkg Trader Joe's Chicken Andouille Sausage pre-cooked (again any brand would be fine this package had 4 sausages in it)

4-6 cloves of garlic

Pine nuts

3 tomatoes, diced

sesame oil

1 lemon

Basil

Salt and pepper to taste

Cook pasta according to package directions. Take 4-6 cloves of garlic, or more if you prefer, slice and add to skillet with about a tablespoon of olive oil. Saute till garlic begins to soften, then add pine nuts and continue cooking till pine nuts are browned and garlic is cooked. Pour over diced tomatoes in a bowl, squeeze one lemons worth of juice and drizzle with some toasted sesame oil. Add basil, fresh is my preference and I love a ton of basil. We didn't have any fresh so we used the frozen cubes. Two work well and the heat from the garlic and pine nuts seemed to melt the cubes fine. Salt and pepper to taste and toss and set aside to let flavors meld.

Slice sausage, this is best if it is pre-cooked. I cut them at a diagonal. Place them in the same skillet that the garlic was cooked in and cook until sausage is heated and starting to brown, toss frequently.

Once pasta is cooked, drain and return to pot. Mix in cooked sausage, and tomato mixture. Serve and enjoy!

Some fresh grated Parmesan cheese and fresh ground black pepper is a delicious addition after it has been dished up.

I made this last night...just as I suspected, hubby loved it. Thanks for the recipe!

My spicy pickled eggs after three weeks. Still not much difference from one week.

S just perfected the cooking technique for some amazing Mariano's Fresh market jalapeno & cheddar and philly cheese steak sausages...

Shallow-lipped cookie sheet with garlic and Stingo beer poured underneath for 15 minutes on each side at 400*, then crisped on the Foreman for 2 minutes. My mouth is on fire and I am so happy right now. :)

Today was perfect breakfast food sunday.

Spinach bacon quiche, cheddar biscuits, and ghiradelli brownies to top it off, along with some coffee. I am stuffed.

Falafel and tzatziki from the hippie co-op. Yum.

After the delicious beers, I got treated to escargot with mushrooms in garlic butter on toast, grouper Matanzas (grilled tomatoes, feta, basil, other herbs atop a piece of perfectly seasoned and broiled and pan-seared grouper, which was in turn atop a thin slice of lightly battered and pan fried eggplant), with mixed berry crepes filled with vanilla ice cream and topped with warm seasonal berries... and an espresso. I has a happy. :D

Tonight for dinner I made Asian-Inspired Chicken Soup. I added leeks and another clove of garlic, and it was delicious.

I served it over a little bit of yellow noodles, with 2T of chopped cilantro, sriracha sauce, and some extra soy sauce since it wasn't salty enough. I can't attach pictures in this thread, so you'll just have to imagine how yummmmmm-ohhhhh this one was.

Awful picture, fabulous brunch.
Caprese benedict with scrambled eggs (I hate any other kind of egg).
English muffin, slice of tomato, thin slice of mozzarella, eggs, and in house made pesto-hollandaise sauce. With the best damn bloody mary I've ever had.

Why do we call it Tunafish? Is this to distinguish it from Tunacow? It just seems a little redundant, no?

I am about to consume a substandard, but nonetheless reasonably okay given the circumstances, bagel.

noodle 02-27-2011 04:52 PM

To me, tunafish indicates from a can, or cooked.
Tuna steak is sushi-grade, and more deliciouso.

I think I should be eating something for dinner, but I really just want a nova bagel now. :/

Ha!

I still think it sounds funny to say Tunafish. I think I am going to have some Baconmammal tonight for dinner.

Hubby vetoed the benedict I wanted to make, so instead I made a leek-spinach-goat cheese tart. It turned out pretty nicely.

Veggie curry w/ mushrooms, garlic, red peppers, green peas, yellow squash, and sun-dried tomatoes. Spooned over spicy white rice.

Cinn is hooked on curry now. Next up, curry lentels w/ veggies. Flat bread to go with it.

snowy 03-21-2011 04:18 PM

What kind of curry? Indian? Japanese? Thai?

We've really been into Thai curries lately. I need to pick up some more curry pastes. Right now we have red, green, and massaman in the fridge.

If I weren't out of carrots, I would totally make curry for dinner.

LordEden 03-21-2011 04:26 PM

Indian red curry from a paste. Went to the asian market friday and picked up some items.

Cooked the paste in veggie oil for a few minutes, added coconut milk (1 can 13.5oz) and added all the veggies. Brought it to a boil and turned it down to simmer. Cooked white rice with curry powder, cumin, garlic powder, onion powder, black pepper and salt.

Charlatan 03-21-2011 04:43 PM

Making Thai curry from scratch is pretty easy, especially if you have a food processor.

I make big batches of red and green pastes and then freeze them.

snowy 03-21-2011 05:04 PM

I think it's probably easier to get the Asian ingredients you need for a Thai curry where you are :) Galangal is a little harder to find where I am.

Charlatan 03-21-2011 05:06 PM

Galangal can be tricky here at times as well. I just substitute with ginger. It's close enough.

When I do find galangal, I buy lots and freeze it. It keeps well.
