Mushy veggies, especially peas and lima beans, are disgusting and have been cooked too long. Optimally, vegetables should be prepared to a palatable tenderness. You don't want to taste the rawness, but you still want the flavor of the veggie without the watery mush.

I don't avoid vegetables on purpose... we just don't buy them very often, because they end up rotting in our fridge for weeks afterwards. The most adventurous I usually get is a bagged salad, which pressures me to eat it quickly before it turns to mush. I would eat vegetables if they were in front of me, but I'm not keen on cooking them, nor is my husband. I'm lucky if I get my daily serving of vegetables in a week's time... I know, I know!!!

I do love me some pickled (I think) red kale/cabbage... Scandinavian style, and goes so well with most dark meats. Mmmm!!

I suppose the best thing would be to stock up on frozen vegetables, but I've heard that they aren't very good for you... nor are canned foods. Of course, at the rate I'm going, it would probably help if I ate ANY kind of vegetable, regardless of how it's stored.

No strong opinion on lima beans, but I really dislike brussel sprouts. My husband, however, took quite a liking to them last year... so I made myself eat some at the time. But I don't like them.

If I had to pick a favorite vegetable, it would probably be broccoli... you can include it with just about any meal. Too bad it's so expensive (and crappy quality) in Iceland.

Yay, it's almost yam/sweet potato season! I ate a bunch of sweet potatoes last fall. They are healthy comfort food.

I probably eat 1-2 servings of vegetables a day. I used to eat more, but now I teach during the dinner hours 3 days a week.

Related to the roasted veggies discussion above, I really like roasted parsnips. I had them for the first time last year. I usually cut them into chunks with chunks of carrots & onions, toss them all in olive oil and spices, and roast 'em in the oven. Very tasty.

Ooooo I have a bamboo steamer and I *love* to steam broccoli and asparagus and green beans and carrots and cauliflower....

Tonight I made a kickass stir fry for dinner with peppers, broccoli, mushrooms (not a vegetable, I know, but still yummy!), and a whole eggplant. Mmmm I freakin' LOVE eggplant...

I give my son fresh or steamed vegetables and fruits at every meal. His favorite is broccoli (pronounced bwaaaaaaaaaaaaaaaaaaaaaaaaa-klee!).

Frozen veggies are alright in a bind, but I can't stand canned veggies. Yuck.

Steaming veggies is probably the healthiest way to get kids to eat them. Drowning them in Velveeta fake cheese-glue is up there with the least.

Frozen veggies work best for me, I can easily grab a handful, toss it in soups/couscous and have an instant serving with no effort. I always keep a bag of spinach or broccoli around; thaw and scrambled with an egg and topped with skim riccotta and roasted (or fresh grated) garlic.

I love brussel sprouts now! Cut them in half, toss with olive oil and salt, roast in an oven for 45 minutes. Toss that into balsamic vinegar, chopped walnuts and pepper, and dig in.

After a good scare from my doctor regarding my high cholesterol and fatty liver (at 21!), I eat any and all vegetables I come across. In 2 years I've dropped 3 pants sizes, 40 lbs, and cholesterol and liver are good and healthy. I haven't quite cut out all my guilty meals (Chili Tamales from Tommy's), but I'm trying to compensate with my veggies, raw almonds and Yogurt (with active cultures of course).

Garbonzo beans! Pureed with lots of garlic into delicious hummus. I make sure I'm not around the general public after consuming this, though. Brings tears to my eyes.

I'm having a tough time getting my gf to eat healthy. She doesn't cook, outside of frozen potstickers. I have managed to get her to eat plain yogurt, and avoid chips and cookies. When she's not looking, I toss out her soda, or sneak in some ground flax meal in her smoothies. I haven't quite sold her on prunes yet. =)

Honestly, I eat very few vegetables.

I do take multivitamins, and whatever is in protein shakes, energy bars, and other health food riff-raff, but without supplementing my diet I would probably have scurvy or worse.

It is too easy for me to go out to lunch with the guys and the eat again on the way home from work. Also, I have a fast metabolism and I have a relatively physical job. I am always hungry and salad never seems to satiate me. I find myself reading the nutrition information on foodstuffs to make sure I am getting enough calories....nutritive content takes a back seat to simply getting the energy I need.

The sad part is that even eating double what most people (under about 300 pounds) consume I still can't put on weight. Go figure.

Most men overkill their protein intake and ignore fiber, proper carbs, etc.

I'm a vegetarian, but I don't have a very subtle sense of taste, so I tend to spice everything up with either balsamic vinegar, flavoured extra virgin olive oil, herbs, garlic, or various kinds of chilli peppers. Delicious.

Calories are one thing, but having the vitamins and minerals to do such things as access energy, maintain immunity, heal, etc. is probably more important. A multivitamin is good as an insurance policy, but aren't quite the same as the real deal. Vegetables should be as fetishized as cell phones if we are to move forward as a healthful and happy people.

As much as I like the idea, I'm not sure that would be enough corn for me. I really like corn. I might just have to get the regular size steamfresh bag and see if that's enough.

Those singles would never be enough for this household, lol, but I do like those steamer bags. They work well.

I just made homemade salsa in my new food processor yesterday. It came out delicious...only thing is I have about a gallon of the stuff now, heh...salsa with every meal!

Oooh. If I had a food processor, I would make so much salsa every summer. I love love love tomatoes and peppers from the farmer's market. Luckily for me, one of the organic farms I love in this area makes their own salsa and sells it in tubs down at the market. I also like all kinds of weird salsas--I'd love to make my own mango salsa sometime.

What kind of salsa did you make, MM?

Lima beans are pure joy. Did you know that lima beans were actually pixy lungs? They are. They compliment so many different things and are even delicious on their own.

Brussels sprouts, on the other hand, are the devil's testicles. I can't imagine eating them without someone holding a gun to my head. The sickly sweet taste reminds me of what happens to crab meat left out during a nuclear holocaust. They're almost as bad as beets.

I know I love it, too.

I made a very simple tomato salsa - tomatoes, onions, jalapeno peppers w/ fresh cilantro, oregano and lime juice. It's very yummy, though. I just had some more and it got even better overnight.

C-Daddy: At Thanksgiving I ate this mess of brussel sprouts sauted with French's mustard and soy sauce. It looked just awful, but I felt compelled to try it because it sounded so unusual. I was assurred it was tasty, and indeed it was. I am still working on recreating the recipe. In addition my Aunt Sylvie used to make fab limas, and I would often request she make them for my birthday. I am a veggie kind of girl preferring them canned or fresh, and eat some variety daily.

PS: Have you sneaked into the ladies only forum? I thought so when I saw your posting title.
