And sweet potatoes are a nutritional powerhouse. All those antioxidants, vitamin A, vitamin C, etc. Plus they're good for your blood sugar, considering it has a lower glycemic load than many rices and pasta. I only wish I'd eat more. I actually bought some at a farmer's market a week ago with the intent on roasting them up to deliciousness.

But overall, I wish I'd eat more vegetables in general. Dark green and colourful ones especially. They tend to be more loaded with goodness.
