I probably eat 1-2 servings of vegetables a day. I used to eat more, but now I teach during the dinner hours 3 days a week.
Related to the roasted veggies discussion above, I really like roasted parsnips. I had them for the first time last year. I usually cut them into chunks with chunks of carrots & onions, toss them all in olive oil and spices, and roast 'em in the oven. Very tasty.
