Frozen veggies work best for me, I can easily grab a handful, toss it in soups/couscous and have an instant serving with no effort. I always keep a bag of spinach or broccoli around; thaw and scrambled with an egg and topped with skim riccotta and roasted (or fresh grated) garlic.
I love brussel sprouts now! Cut them in half, toss with olive oil and salt, roast in an oven for 45 minutes. Toss that into balsamic vinegar, chopped walnuts and pepper, and dig in.
After a good scare from my doctor regarding my high cholesterol and fatty liver (at 21!), I eat any and all vegetables I come across. In 2 years I've dropped 3 pants sizes, 40 lbs, and cholesterol and liver are good and healthy. I haven't quite cut out all my guilty meals (Chili Tamales from Tommy's), but I'm trying to compensate with my veggies, raw almonds and Yogurt (with active cultures of course).
Garbonzo beans! Pureed with lots of garlic into delicious hummus. I make sure I'm not around the general public after consuming this, though. Brings tears to my eyes.
I'm having a tough time getting my gf to eat healthy. She doesn't cook, outside of frozen potstickers. I have managed to get her to eat plain yogurt, and avoid chips and cookies. When she's not looking, I toss out her soda, or sneak in some ground flax meal in her smoothies. I haven't quite sold her on prunes yet. =)
