Home-Made Popsicles
I have two young kids who are very social so our house is always full of neighborhood kids who love to eat freezies and popsicles. Up untill now we always buy them, but I wouldnt mind making some from juice or koolaid or something.
But How do I make them so they aren't just an ice-cube on a stick? So does anyone have any home-made popsicle recipes or even frozen yogurt on a stick recipes or anything that can be like that which isnt just a piece of flavoured ice, but has the softer texture? Daval

Dixie Cups, with some plastic wrap over the top, and stick in a craft stick -- freeze until firm... This months Real Simple magazine had an article on making popsicles and had some interesting suggestions, but alas I can't remember any of them -- when I'm home over the weekend, I'll try to remember to list them. You can do smoothies on a stick - take some bananas, strawberries, yogurt -- blend - -then freeze - or whatever combination you choose.

But I love the Tupperware Popsicle Thingamajiggies! They are my third favorite Tupperware product after the hotdog keeper and the devilled egg tray. Alas, I own none of them; but at one point in my life I did have the Popsicle Thingamajiggies. An ex-roommate absconded with them.

I'm just trying to save y'all some money...
How about these -- Pudding Pops Make a batch of pudding (any flavor - Non instant variety). Add whatever you want to to it, marshmallows, peanutbutter chips, m&ms, cocoanut, whatever you want. Freeze until firm. Watermelon Pops Blend one cup watermelon chunks (seeds removed), orange juice and water. Blend well. Then pour and freeze

The blended watermelon, fruit, and pudding is a great idea. I will certainly try those.
I already have the popsicle tupperware thingies, so what I'm looking for is more of a recipe for a juice based popsicle or something similar. Whenever I have tried using just koolaid it freezes completely solid and is basically a flavoured ice-cube whereas a store bought popsicle is a bit softer - its that softer texture i'm looking for. The fresh fruit and pudding should certainly do that, but what about a pure liquid based recipe, any suggestions? How about alcohol based?

you could add alcohol to any fruit recipe -- probably rum -- like make a frozen Mai Tai, or a Daquiri popsicle.
Just remember to keep it really light on the rum, otherwise it wont freeze solid. (When I get home FRiday night, I'll dig out the magazine, I thik it had some alcohol based recipes in it)

I forgot I had on-line access to Real Simple...
raspberry pops Combine 1 1/2 cups fresh raspberries, 1 cup raspberry juice drink (such as Welch’s), and 2 tablespoons light corn syrup (or crème de cassis) in a blender and process until smooth. Add 1 or 2 raspberries to the pop molds or 3-ounce paper cups. Fold an additional cup of raspberries into the blended mixture and spoon into the molds or cups. Cover and freeze until firm. mandarin orange cream pops Place one 11-ounce can of mandarin orange sections (drained) in a blender and pulse to puree. Add 2 cups softened vanilla ice cream and 1 teaspoon finely grated orange zest and pulse until well blended. Spoon the mixture into pop molds or 3-ounce paper cups. Cover and freeze until firm. tip: Halve the vanilla ice cream and add 1 cup orange sherbet for a lower-calorie recipe. lemon-blueberry twist pops Drain one 15-ounce can of blueberries, reserving the juice. Set aside 1/3 cup of the blueberries. Puree the remaining berries and 1 tablespoon juice in a blender. Fold in the reserved berries. In a small bowl, whisk two 6-ounce cups of custard-style lemon yogurt with 1/2 cup milk (whole, skim, or 1 percent). In pop molds or 3-ounce paper cups, alternate 2 rounded tablespoons of the yogurt mixture with 1 tablespoon of the blueberry mixture. Swirl with a knife. Cover and freeze. mint-melon pops Puree 1 1/2 cups cantaloupe chunks and 1 tablespoon orange juice in a blender. Divide the mixture between pop molds or 3-ounce paper cups. Freeze until the top becomes firm, 30 minutes. Rinse the blender, then puree 11/2 cups honeydew chunks, 1 tablespoon thawed limeade concentrate, and 2 mint leaves. Remove the molds from freezer and top with the honeydew mixture. Cover and freeze. Wine Popsicles

But for yourself, that does sound good! I am going to do that this weekend if I can find the rubbermaid thingies. Or dixie cups- that sounds good too. Just don't do it with soda pop. They don't freeze right. |

I think you are referring to 'quiescently frozen confections'
"Commercial vendors of flavored ice use stabilizing ingredients that keep the syrup, flavoring and other ingredients from separating from the ice as it forms. Instead, these other ingredients become a sort of semifrozen lubricant between the ice crystals, giving Popsicles their slushy consistency" I found it here: http://home.howstuffworks.com/question499.htm BTW, I think the Welch's grape juice bars are the best. Popsicle brand Banana popsicles are a close second though.
