Do you....fondue?
I love fondue, especially after going to a local fondue restaraunt called the Melting Pot. Expensive, but worth every penny.
I've had a couple fondue parties and tried new recipes each time. My favourite is the desert fondue: Tobblerone Mousse choc. fondue. Dip cheesecake and fruit, and even some brownies in it. What are your fave recipes and foods to cook with fondue? |

I am a fan of fondue, dessert fondue as well, and its suprising that I do, cause all my co-workers at this german restaurant I worked at hated it.
German restaurant is called Gustavs, or Rheinlander and its in Portland. Rheinlander's top secret fondue recipe. 20lbs swiss cheese 1 gallon white wine 1T Nutmeg 4T Kosher salt 4T White Pepper Melt cheese and wine together, stir in spices. Cook for 15 minutes. Serve. It is a shitload, but that is off of memory, and I really dont want to scale it down. Oh, and keep it on the DL, its TOP SECRET!

I love fondue. We actually have a Melting Pot across the street that my wife used to work at. Expensive but really good. There's also a good fondue restaurant in Atlanta, with a pirate theme I think, can't remember the name.
Here's my favorite fondue. Don't worry about exact ingredients, I don't. 1. Add some decent beer to fondue pot. 2. Shred some cheddar cheese and coat lightly with corn starch, or flour. 3. Add the cheese to pot one handful at a time, and melt completely before adding the next handful. 4. Add 2 to 3 cloves of finely chopped garlic. 5. Add Worsteshire Sauce to taste. (Sounds a little wierd, but trust me!) 6. Finish with fresh ground black pepper. 7. Dipping ideas: cubed bread, sliced veggies and fruits. If you don't have a fondue pot, a double boiler works nicely, or you could also use a crock pot.

Sounds fabulous!
I love both types of standard fondue - both Savoyarde and Bourgignonne. Here's what the latter dish amounts to: Lots of nice (sirloin/rump/fillet) beef cut into smallish cubes. A giant bowl of chips - french fries/freedom fries Sauces: Mustard(s), blue cheese, 1000 island, horseradish, Kikkoman's soy, teriyake, sour cream, tabasco, chillis...Everything. Heat oil in a high-sided pot in the middle of the dining table. Everyone gets their skewer (colour-coded if you're not on cutlery-snaffling terms), sticks at least 2 chunks of beef on the end and dunks it into the very hot oil until done. Your range of favourite sauces should already be festooned around the edge of your massive plate, so start dipping, stop dripping, and don't forget your chips! |
