gryuere (sp) is also a commonly used cheese for fondue

a simple recipe for a lot is

3 lb butter
6 cups flour

make roux

add

2 gallons milk
2 cups white wine
1 T salt
and 20 cups of gryuere (sp)

cook until cheese is melted
