Sounds fabulous!
I love both types of standard fondue - both Savoyarde and Bourgignonne. Here's what the latter dish amounts to:
Lots of nice (sirloin/rump/fillet) beef cut into smallish cubes.
A giant bowl of chips - french fries/freedom fries
Sauces:
Mustard(s), blue cheese, 1000 island, horseradish, Kikkoman's soy, teriyake, sour cream, tabasco, chillis...Everything.
Heat oil in a high-sided pot in the middle of the dining table. Everyone gets their skewer (colour-coded if you're not on cutlery-snaffling terms), sticks at least 2 chunks of beef on the end and dunks it into the very hot oil until done.
Your range of favourite sauces should already be festooned around the edge of your massive plate, so start dipping, stop dripping, and don't forget your chips!
