a lil chicken help

Hey, i'm not a big red meat fan, so i stocked up on boneless chicken coming out the wazoo... i do the cooking for three of us, myself and my two male roommates, and i was wondering if anyone had any easy suggestions that involved chicken. I'm looking for a bit of variety of tastes here, but budget is relatively limited. Any suggestions would be appreciated thanks!

get some chicken seasoning or poultry seasoning, garlic chooped up, alittle oil for the pan, brown garlic, add chicken, either whole or cut into pieces. add seasoning, wait til its almost done and add some green bell peppers (or any color bell peppers) wait til they get nice and cooked.
makes an awesome chicken! i add brocoli sometimes. angel hair pasta and like a creamy garlic sauce makes it bangin...enjoy!

any Thai dishes? you can find the spices very inexpensively. Shope the importfoods.com and then head to your local asian market and try to find them there. I make Massaman Chicken Curry at home and it costs about $4, going to Thai restaurant upwards of $8

Man this thread is making me hungry.

I enjoy fresh baked chicken breast with rice a roni smothered with cheese.

Or sliced into strips with some teryaki sauce, snow peas, brocolli, and a can of chow mein vegetables ( baby corn etc ). Lazy, but damn tasty.

King pao chicken. grab one of the spice packs from the local market (usualls next to/near the mexican foods). Fairly easy, just needs green pepper, scallions, some soy sauce. once packet will feed three or four, with rice.

Ginger is usually relatively inexpensive. I mean, the root itself.

Take some brown sugar and some finely minced ginger and make a brown sugar/ginger glaze. Delicious.

Soy sauce, apricot jam (no apricot chunks, the clear stuff), sesame oil, and minced ginger also makes for quite the sweet gingery glaze as well.

I love ginger.

Try this one..

Do you have a George Foreman grill? If so, take 3 thawed chicken breasts and put them in a zipper bag. Into that bag, add 1/4-1/2 cup of Italian style dressing, (the oil and vinegar type) if you have any Thyme and Basil, add those in to. Allow the chicken and dressing and spices sit in the bag, in the fridge for an hour.
Heat up your grill, and cook away!

Also, take a chicken breast and place it on a sheet of aluminum foil, large enough to fold over and seal. On top of the breast, add a tsp of butter, a dash of salt and pepper, and a 1/4 packet of Lipton Dry Onion Soup Mix. Seal the packet and place in a 400F oven for 30 minutes.

If those don't do it for ya, I've got more!

I second the Foreman Grill idea. It's not that expensive and it makes cooking chicken breasts so quick, and they always come out juicy. The only problem is that sometimes it's a pain to clean, if you're lazy like me.

Don't forget that the broiler is great for cooking chicken.

And if you want to cut cooking times then pound out the chicken before you cook it, it will cook faster and more evenly.

I do this all the time.... its great..

I also like oven fried chicken. I either glaze it with milk/egg or with butter/olive oil. Dip in crumbs and bake at 375.

Season your bread crumbs with thyme, sage, and whatever spice of your choice. mmmmmm.....

Last night, I used a cast iron skillet (that I can fry with and then put in the oven). I fried thin cut chicken breasts in olive oil. At the same time I fried some sliced portobella mushrooms in butter. When the chicken was almost done I opened a can of stewed tomatos and dumped that on the chicken, then added the mushrooms, then added some chopped garlic and baked it for 20 minutes in the oven.

It was awesome. Had a nice tomato-olive oil broth that I sopped up with bread.
