Steamed TVP Dumplings (vegan)

Steamed TVP Dumplings

Ingredients
1/2 cup TVP
1/4 cup water
1/2 tsp. grated fresh ginger
1 clove garlic, minced
2 tsp. soy sauce
2 T scallions, minced
4 T mushrooms, minced
1/8 tsp. ground red pepper
wonton wrappers

Preparation
Mix the TVP and water to reconstitute. Add the rest of the ingredients and mix well.

Fill each wonton wrapper with about 1 rounded tsp. of the mix, using water to seal the edges.

Steam for about 5 minutes and enjoy!

Makes about 20 dumplings.

Notes:
1) If you use a metal vegetable steamer give it a quick spray of Pam to prevent them from sticking.

2) A great sauce for dipping them:

2 T water
2 t soy sauce
1/4 tsp. fresh grated ginger

Maybe I just don't do enough vegan cooking (went vegetarian for awhile, but never vegan, I have to get SOME protein), but what is TVP? Also, a great sauce that I use for potstickers, which I'm assuming are fairly similar, is:
4 tbsp soysauce
1/2 - 1 tbsp vinegar (adjust to taste, I can't say I've ever actually measured it)
1 tsp sugar
1/2 a green onion, sliced thinly
1 clove garlic, minced.

combine everything and fridge it over night to let the flavors blend

TVP stands for Textured Vegetable Protein. You can find it in any health food store, usually sold in bulk, and not expensive at all. It's dehydrated, and can be used in many recipes. Before the invention of "Beef-not", I had used TVP as a meat substitute for tacos and other ground beef recipes in the days when I didn't eat anything that had a face.

I was a vegetarian for about 5 years... then met and married my husband who just wouldn't budge on the meat/no meat issue... So I gave in.. every once in a while I cook some vegetarian meals now. Also, my cousin is a vegetarian. We spend time together and swap recipes as well.

Glad you enjoy the vegetarian recipes. They're not all vegan, though. Some will be lacto/ovo.

It really is nice to see vegetarian/vegan recipes. I have a lot of trouble finding good recipes (I'm lazy) so it's great to be able to find recipes in a place that I already go =) haha.. Now I just need to learn how to cook better!
