What to do with Canned Salmon...
Easy Mini-Salmon Burgers
Ingredients 7 1/2 oz Salmon, canned 4 oz Saltines, finely crushed 1 Onion, finely diced 1 Egg 1 tb Lemon juice 2 teaspoons Dill 2 teaspoons Pepper Preparation Trim canned salmon of large bones and skin as desired. Mix well with other ingredients, except oil. Form into 3 inch x 1/2 inch patties and fry lightly in oil until golden brown. Makes approximately 12 mini-salmon burgers. |

Orange Almond Stir Fry
Ingredients 1 Onion, cut into thin wedges 1/2 Green, red or yellow pepper, sliced 12 Snow peas 1/2 teaspoon Finely chopped fresh ginger 1 small Cloved garlic, minced 1 7.5 oz can salmon 1/4 cup Chicken or fish stock 1/4 cup Orange juice 1 tablespoon Lemon juice 1 teaspoon Cornstarch 1/4 teaspoon 5 spice powder, optional 1/4 cup Sliced almonds Preparation Combine onion, pepper strips, snow peas, ginger and garlic in a 6 cup microwaveable casserole. Cover and microwave on high for 3-4 minutes or until softened. Stir or shake dish once part way through cooking. Meanwhile drain salmon juices into a small dish and add stock, orange juice, lemon juice, cornstarch and 5 spice powder. Stir until smooth. Break up salmon, discarding bones. Stir sauce mixture into vegetables. Cover and microwave at high for 2-3 minutes or until mixture comes to a boil and thickens slightly. Stir at least once during cooking. Add salmon and microwave, covered, on high for 1 minutes or until heated through. Garnish with almonds and serve over rice. makes 6 servings |

also salmon sandwiches:
take salmon and put in a bowl, mix with 1 or 2 table spoons of mayo [or until slightly creamy], add some chopped scallions. Spread on bread [best if toasted]. Delish.

My wife loves the salmon cakes....I just feed the cat.
Now give me fresh salmon and it's time to chow down! Will give the orange almond stirfry a shot sounds good!

Here's my salmon croquettes recipe. Try it out some time!
1 can canned salmon. couple potatoes, boiled and mashed (without adding anything to em, just mash) dash worchestershire sauce salt and pepper 1 egg bread crumbs. dipping sauce: mayonnaise 1/2 tsp soy sauce finely minced ginger directions: -add the salt, pepper, worchestershire sauce, and salmon to the mashed potatoes, and mix it up good. -roll into football shaped balls that fit in the palm of your hand. -coat each piece in mixed egg, then roll in bread crumbs. -fry in oil on fairly high heat. drain on paper towel. -mix up mayo with soy sauce and ginger. ginger powder works fine too. should look green. -serve em up and dip in sauce... SOOOOO GOOD!!!!! enjoy
