Right after boiling, refill the pot with cold water and let 'em sit for 30 seconds to a minute. Not only will the egg contract a bit (making it easy to peel) but this will also prevent the yolk from getting green around the outside. I like to run the cold water over the eggs and keep letting more of the water out of the pot for a bit at first so that the residual heat from the pot doesn't make the water warm.

Do it soon after boiling, is the other thing. If you boil them then let them cool slowly, you'll be picking teeny little shell bits off the egg for a long time. If you take the hot egg straight from the water, then shuck it under a cold running tap, the shell will come off nearly in one piece.

Hmm, well I don't peel mine right away because I stash a bowl in my fridge for a quick protein boost after runs, but they peel fine after boiling in salty water and thing going in a bowl of ice water for a couple of minutes right after I take the pot off the heat.
I didn't actually know the salt water helped either - I just did that to make the water boil faster. The ice water is crucial. I can just slam the egg against the counter once and run my finger under that skin below the shell to get it all off in one swoop. |

Yeah, the cold water helps. I usually run cold water over my eggs for a while after taking them off the heat. Then, when it comes time to peel them, I roll them on the counter to break the shell, and run it under the water as I peel them. Voila...clean hardboiled egg, ready to eat.

or you could do like the guy in the video.
as far as the sulpher (green ring) 15 minutes from start to finish. Put egg in room temperature water and on flame. 15 minutes later, it's finished. Run under cold water...

For me... first I gently knock the egg a few times on a hard surface to break the shell in a bunch of places.
Then I pull a bit off and try to greb the membrande inside. This takes most of the shell off in one go. I think for this to work the main thing is that the shell is cracked up. |
