Hmm, well I don't peel mine right away because I stash a bowl in my fridge for a quick protein boost after runs, but they peel fine after boiling in salty water and thing going in a bowl of ice water for a couple of minutes right after I take the pot off the heat.
I didn't actually know the salt water helped either - I just did that to make the water boil faster. The ice water is crucial. I can just slam the egg against the counter once and run my finger under that skin below the shell to get it all off in one swoop.
