Grilled Moroccan Steak recipes
This thread is in response to a specific request.
Ingredients 4 pounds Flank steak 1 medium onion 1/2 cup lemon juice 1/2 cup olive oil 1/2 cup minced fresh ginger 2 tablespoons minced fresh parsley 2 tablespoons soy sauce 1 tablespoon ground cumin 1 tablespoon chili powder 2 teaspoons sherry 2 cloves garlic 1 teaspoon dried oregano 1 teaspoon turmeric 1 teaspoon ground pepper Preparation Mix ingredients together and marinade steaks in a shallow baking dish for 4 hours in the refrigerator. Remove steaks from marinade and reserve. Grill steaks to desired doneness (about 8 minutes on each side). Heat marinade in saucepan for 10 minutes. Cut steaks diagonally into thin slices. Years and years of saving them, trying some out on my own, having them at friends houses and asking for the recipe, and sometimes asking the chef or owner of a restaurant for the recipe for a certain dish... sometimes they share
Stir-fried beef with fragrant Moroccan spices and almonds. Ingredients 17 1/2 oz beef stir-fry strips 1 Tbsp olive oil 1 tsp crushed garlic 1 onion, chopped 1/3 cup slivered almonds 1 tsp ground turmeric 1 tsp ground cumin 1 Tbsp sugar 14 oz can tomatoes, with their juice 1/2 cup raisins 2 oz spinach, shredded Preparation To prepare beef strips, put recommended cut, covered, into freezer until firm (about 30 minutes). Slice across the grain of the steak in very thin strips. Mix beef strips with half oil and garlic. Heat wok or skillet on high (no need to add any extra oil). Stir-fry beef strips in small batches for 1-2 minutes. Remove when cooked and allow pan to reheat before stir-frying next batch. Heat remaining oil in pan. Stir-fry onion, almonds and raisins for 1-2 minutes. Return stir-fried beef strips. Add turmeric, cumin, sugar, tomatoes and spinach. Allow to heat through, about 1-2 minutes. Variations Recommended Cuts: Beef strips available at point of purchase for stir-frying or Prepared from blade, fillet, rib eye [Scotch fillet], round, rump, sirloin or topside steak. Wow! That steak recipe sounds great. I'm definitely going to try that one. I love grilling and eating grilled food. I'm especially thrilled when I can turn a "budget" cut of meat into something delicious. I don't suppose I can get around the fresh ginger. 1/2 cup would probably be more than one of those roots I've seen in the produce section.
