Stir-fried beef with fragrant Moroccan spices and almonds.
Ingredients
17 1/2 oz beef stir-fry strips
1 Tbsp olive oil
1 tsp crushed garlic
1 onion, chopped
1/3 cup slivered almonds
1 tsp ground turmeric
1 tsp ground cumin
1 Tbsp sugar
14 oz can tomatoes, with their juice
1/2 cup raisins
2 oz spinach, shredded
Preparation
To prepare beef strips, put recommended cut, covered, into freezer until firm (about 30 minutes). Slice across the grain of the steak in very thin strips.
Mix beef strips with half oil and garlic.
Heat wok or skillet on high (no need to add any extra oil). Stir-fry beef strips in small batches for 1-2 minutes. Remove when cooked and allow pan to reheat before stir-frying next batch.
Heat remaining oil in pan. Stir-fry onion, almonds and raisins for 1-2 minutes. Return stir-fried beef strips.
Add turmeric, cumin, sugar, tomatoes and spinach. Allow to heat through, about 1-2 minutes.
