Lamb Kibbeh
1 lb ground lamb
1 cup bulgur (soaked in water 1 hr then drained, makes 2 cups) 1/2 small onion, minced (I like sweet onions) 2 tbs fresh mint, minced (dried doesn'thave the same flavor to me, but your choice) 1/2 tsp cinnamon 1/2 tsp allspice 2 Tbsp olive oil Combine lamb, drained bulgur, onion, mint and spices. Mix well with clean hands. Make baseball sized meatballs and roll into oblong shapes... grill or bake these meatballs. Serve or... Put mixture in in cake pan at 375 degrees F for 35 minutes. Cut into wedges and serve. (this way is really tasty, but depending on the ground lamb you are using, it can be a little fatty,and the resulting product gets a little greasy (which isn't actually bad tasting... but... ) Serve with tzatziki sauce if you like.. 1 Pint plain yogurt (live dangerously, don't use the fat free version, it's got a dfferent texture that just doesn't work in this 1/2 cucumber, finely chopped (I like the seedlss english cukes) 3 Cloves garlic, minced 1 splash olive oil 1 lemon, juiced zest of 1/2 the lemon Parsley or mint, chopped To the yogurt add the cucumber, garlic, olive oil, lemon juice and salt. Blend well with fork. Top with parsley or mint. Refrigerate (I've seen recipes for this where it suggest draining the yogurt, youc an do that-- put the yogurt in paper towels over a straner for 2 -3 hours - it gets a cheese like texture - but you alsoneed to use a lot more olive oil to get the texture you want)

Wheat kernels that have been steamed, dried and crushed. The outer layers of the bran are removed, and the grains are cracked. It's It can be used in many of the same ways as rice. When cooked, it has a nutlike flavor and a slightly chewy texture. It's one of the ingredients in taboulleh salad... it hink it's middle eastern...

Bulgur is also called burghul so if you're at a middle eastern store, that might be how it's labeled. Also, many people (including myself) swear by Raw Kibbeh (Kibbeh Nayyeh) instead of fried, grilled or baked kibbeh. The same ingredients are used, but you process the meat in a food processor until it's very fine then mix all the ingredients. Keep it chilled until it's time to serve it, then garnish it with olive oil and chopped parsley on top and serve with flat bread (pita or other).
*** WARNING *** This recipe calls for RAW meat. Be careful and selective with where you purchase meat if it is to be consumed raw. Me, the OP, other posters in this thread, nor the TFP or it's owners/administrators suggest, recommend or condone eating raw meat... but sometimes it's damned tasty. the raw kibbeh is quite tasty... i've only seen it served with onion chunks as a dipper... made it really flavorful - kind of like a lamb tartar...
For it to be served raw, you'd want as tender a lamb as possible - like from the baby lamb chops I'd guess.. that'd bet pretty pricey... but definitely worth it..
