the raw kibbeh is quite tasty... i've only seen it served with onion chunks as a dipper... made it really flavorful - kind of like a lamb tartar...
For it to be served raw, you'd want as tender a lamb as possible - like from the baby lamb chops I'd guess.. that'd bet pretty pricey... but definitely worth it..
