Bulgur is also called burghul so if you're at a middle eastern store, that might be how it's labeled. Also, many people (including myself) swear by Raw Kibbeh (Kibbeh Nayyeh) instead of fried, grilled or baked kibbeh. The same ingredients are used, but you process the meat in a food processor until it's very fine then mix all the ingredients. Keep it chilled until it's time to serve it, then garnish it with olive oil and chopped parsley on top and serve with flat bread (pita or other).

*** WARNING *** This recipe calls for RAW meat. Be careful and selective with where you purchase meat if it is to be consumed raw. Me, the OP, other posters in this thread, nor the TFP or it's owners/administrators suggest, recommend or condone eating raw meat... but sometimes it's damned tasty.
