A different kind of salsa
Had some fruit in the fridge that was just not getting eaten, so I got some creativity..... and thought I'd share....
Cantelope and Peach Salsa 1/2 Small ripe cantalope, Peeled, seeded, and diced 3/4 cup red bell pepper, finely diced 2 peaches, pitted and diced (I left the peel on) 1 nectarine, pitted and diced (peel on) 1 large bunch of cilantro, finely chopped 1/2 sweet onion, diced 2 jalepeno peppers, seeded and diced 2 limes, juiced pinch of salt Add all ingredients into a bowl, and stir... Share your own salsa recipes... I plan on serving this with grilled swordfish steak tonite....

That salsa sounds delicious. Unfortunately, JJ is allergic to cantalope so I would have to leave that out. But, I'm sure it would be good without that.
By the way, what time is dinner?

I've made that recipe wiht mangoes too -- I think any kind of fleshy type fruit would work - -I've been trying to come up with a watermelon salsa - but every time I've made it - the watermelon basically disinigrates...

i can't wrap my head around a salsa without tomatoes or tomatillos...
perhaps i should venture to try something like this? hrmm... can't hurt to try!
