Seafood Enchiladas
1 md onion
1 Tbs Butter 1/2 lb crab meat (not Krab) 1/4 lb shrimp peeled deveined, and coarsly chopped (salad shrimp ok) 8 oz of montery jack cheese shredded (about 1 1/2 cups) 1 cup half and half 1/2 cut sour cream 1/4 cup butter 1 1/2 tstp dried parsley 1/2 tsp garlic salt 6 flour tortillas 1 Preheat oven to 350 degrees (175 degrees C) 2 In large skillet, saute onions in 1 Tbs butter unitl transparent. let cool. Stir in Crab and Shrimp. Mix in 1 cup of cheese. Roll the tortillas up around the mixture and place in baking dish 3 In sauce pan combine half and half, sourcream, butter, dried parsley, and garlic salt. Stir until warm. Pour over enchiladas and sprinkle with cheese. 4 Bake in oven for about 30 min. These are pretty rich, so you do not have to eat the whole pan. Last edited by edmos1; 08-23-2004 at 10:04 AM..
