Falafel

i did promise id post the home made falafels when they were made, so here they are.

the inlaws decided to make me some home made falafels from scratch when i got back to oz 2 weeks ago

here is the Falafel sandwiches we had. they were in fact devine!


FIL making the falafel patties


the patties then get dunked in hot vegetable oil






falafels with all the additions ready to go into the sammich







Falafel sammich!..almost there..im salivating by this point...falafel balls, tomato, pickled beet, lettuce, parsley, mint and pickled cucumber and tahini..




sorry i dont have pics after the sammish was rolled... it was too dlish to hold the cam and eat at the same time!

ill get the ingredient from she-lish.

they're quite easy to make, but you'll need to get the portions right otherwise you can end up with falafels the size of softballs, or conversely the size of a penny.

I'm gonna guess tahini is the only condiment. It's a sesame seed paste.

Can't stand the stuff. My grandmother used to eat it straight out of the jar. But I would like the ingredients to the falafels .

sorry woods, was referring to all the pickled items as also condiments.... the lettuce and tomatoes are obvious, the other greens, I'm not sure what that is either.

ahhh, now I can appreciate where you got your name "dlish". That looks SO GOOD! I would love to taste home made falafel, but alas, I have only had "made by others"...though a couple local middle eastern delis have some good stuff.

If any of you have a Maoz near you, try it out...unless we can talk dlish into making house calls.

Recently I ate at one of my favorite little hole-in-the-wall places called Maoz and when I put their falafel in a pita pocket and stack it with fixins it reminds me a little of what looks almost as good as your family cooking. Here's my Maoz falafel thingy: it tastes great...as Tony would say

i looooooooooove falafels.. I think the dumplings are mostly ground chick peas plus seasonings & sesame seeds.

Falafel helped get me through being vegetarian in the suburbs. There's a cute little hole in the wall that makes their own and serves them much like your family seems to.

If you get the recipe, please post it! It'd be nice to be able to make them at home!

I have never made falafel myself, but I absolutely LOVE IT! Your family's spread looks AMAZING!

Taking what dlish said in his OP, and some guess work - I've labelled what I think the other toppings are. Hopefully dlish can confirm.

Wow, dlish! That looks tasty. I made homemade falafel a few weeks ago, but I didn't have all of those wonderful "fixins". Mark Bittman's recipe probably didn't taste as good as your FIL's either.

tanks for that spindles..yes, thats green chillies, but they are way too hot to put a full one in there!

thats not artichoke, that is stuffed and pickled baby aubergines (egplant) . a lebanese speciality, the type that only your mum or old school grandmather can make. its called makdous or batinjan makdous. if you're ever in a restaurant next time, ask for it with your meal. it should come complimentary.

yes i finally got these a few days ago..

Instructions on how to make Falafels!

now these are not my words, so if you have any questions, ill be happy to explain

1) 1 Kilo chick peas
2) 2 cups of foul (fava beans)
3) 2 bunches of coriander
4) 3 to 4 large onions
5) 4 to 5 cloves of garlic
6) 2 tea spoons bi carbonate Soda
7) Salt/Pepper/Cummin/Coriander powder
8) 1 cup of water

Instructions:

- Soak the chick peas in water. Put some carbonate soda in water for 2 days

- Soak fava beans also. Put 1 teaspoon of carbonate Soda and then drain them and wash them

- Mince everything in a mincer machine

- With the corinader, chop them before putting them in the machine.

- Cut the opnions and put them through the machine when you finish mincing everything. Put pepper, salt, corinader and cummin and mix together.

- When frying, put the garlic with one table spoon of bicarbonate soda mix and 1 cup of water, then mix it though the falafel. Put aside then.

- Prepare a deep frying pan, heat the oil. You have to use a special instrument for the falafel (to get them into the circle shape). When you fill it in, you get a flat spoon and you put sesame seeds on top of them and you press it in the hot oil.

- When they become brown, you turn it to the other side. Once other side is brown you are finished.
then you put the falafels in the arabic bread and add the condiments to the arabic bread topped with tahini.

Carbonate soda? What's that? To clarify: there are two kinds of soda in the US--washing soda (sodium carbonate) or baking soda (sodium bicarbonate).

Dlish, is there a specific kind of oil you use? Most of the falafel places around here use peanut oil, which is why we usually don't go there (my son has a severe allergy to peanuts).

I actually love the stuff. A perfect dinner is a platter of schwarma, humus and falafel, with hot peppers and other salads, with choice of red and green hot sauces. It wreaks total havoc on my stomach for a few hours, but as a once-in-a-while indulgence it's worth it!!

loq - any kind of vegetable oil, sunflower oil, canola oil is ok to use.

tippler - its actually fava beans. must change the ingredients...i say they were trying to sabotage my cooking!

LE & snowy - yes its bicarb soda..and no its NOT seltzer water..i dont even know what seltzer water is
