Need help making this...

yesterday at brunch I had the most amazing thing and I cant figure out how to find out how to make it. its real basic, it was a slice of tomato with crumbled blue cheese on it and red onion pieces that had been soaked in "something" it was very wangy so Im guessing it was a form balsamic vinegar? the onions were brown, but hadnt been cooked, they were very crunchy so im guessing whatever they were soaked in is what turned them brown?

ugh I very much want to make this...has anyone had it or made it that can tell me what to soak the onion in?

Was it savory? I've seen raw veggies soaked in left over au jos to bring a different (and wonderful) flavor. That might explain the brown.

I wouldnt say so....it had a very strong vinegar wang to it, thats all I could taste on the onion part

Typically in Florida restaurants I've found that they soak the onions in a little seasoning and some balsamic vinegar with a teeny bit of olive oil and garlic. Then they sprinkle the top of the tomato with a little bit of salt, then the onions (drained a bit) topped with the bleu cheese or gorgonzola cheese. I've also had it flash broiled so the cheese was slightly melty and a tiny bit brown. Yum!

I make a variation of this to serve as a salad before dinner. We add cucumber slices.
