Fold the tortilla in half and cook each side until cheese is melted and tortilla is as cooked as you want it. Add some guacamole (or salsa) for dipping and you have a delicious quesadilla.

2 sandwiches:
Both of these involve making sandwiches of a sort:
I discovered this while working as a cook on a cruise ship, it's fast, and hits the spot: 1) English muffin with melted cheese: - take an english muffin, spread Mayo and/or butter (hint mayo gives it a zest) - crack black pepper to taste - slice sharp cheddar (alternates that work well are havarti, jack etc) - if on hand crumble a blue cheese for flavour - put together as a sandwich and microwave for 30 secs, or until cheese is nicely melted - eat (careful, cheese may be hot) by dipping into ketchup as you go. this next one is a childhood fav of mine: 2) Liverwurst on toast - toast a couple slices of bread - butter/margiarine - spread liverwurst on them - Optional flavour additives: - I always spread hot mustard on the liverwurst (Keen's is the best) - I also slice olives and sprinkle on top - again cracked pepper is a key ingredient. - eat while warm as an open faced sandwich. beer goes well with this. I swear that both of these seem to be addictive perhaps because they are warm. |

Sage scrambled eggs:
3 eggs Splash of heavy cream Lots of Dried sage Dried basil (or fresh if you've got it) Dried oregano Black pepper Shredded parmesan Tiny bit of butter Melt the tiny bit of butter in the pan to grease, mix everything else in a bowl and pour into the pan, scramble as usual.

tin of tuna. tin of black eyed peas. 1 onion, finely diced. A bunch of parsley, finely chopped. olive oil and vinegar, salt and pepper. Toss together. Eat.
This is, in all honesty, a very popular and well-known portuguese summer meal. Sounds weird but the flavours mesh together very well.

FIRST BOWL: 3 med. avocados 2 tbsp. lemon juice Salt & pepper SECOND BOWL: 1/2 c. mayonnaise 2 1/2 c. sour cream 1 env. taco seasoning mix LAYERS: 2 cans bean dip Avocado mix Sour cream & mayonnaise mix 1 c. chopped green onions (scallions) 3 chopped tomatoes 1 can ripe chopped olives 8 oz. grated Cheddar cheese Serve with Tortilla Chips or Doritos

1 cup milk 1 spoon 1 box Cinnamon Toast Crunch. Feast. Really though, favorite is probably just fruit if I want something that quick. Food I like takes prep work, not long but 15~20 minutes.

This looks like it takes a long time, but it really doesn't-- each trip under the broiler should only be a minute or less.
Chicken Sandwiches with Pesto Mayo -rotisserie chicken -sub roll or other yummy sandwich roll -sliced mozzarella -mayo -basil -garlic Broiler ON! Mix mayo, basil, and garlic in small container. Cut roll in half, slide under broiler and toast the roll lightly. Top bottom half of roll with chicken and heat under broiler (if you need to). Top the chicken with cheese, pop back under broiler and melt the cheese. Spread top half of roll with pesto mayo. Serve with salad or something else that makes ya happy.

Our recent favorite is quite similar to StellaLuna's, but my SO is in love with it, so I thought I'd share.
4 slices of 7-Grain Light bread 4 slices Boar's Head Ovengold Turkey 1 Tomato, diced 1 green onion, sliced thin 4 slices Sargento Chipotle Cheddar cheese leaf spinach garlic powder sriracha sauce black pepper I lay the four pieces of bread on a Reynolds Wrapper foil sheet. Dice the tomato, slice the onion, combine in a bowl with garlic powder, pepper and sriracha to taste. Lay enough pieces of spinach on the bread to just cover the bread in a single layer. Place a slice of turkey on each, spoon tomato/onion/spice mixture onto the top, also in a single layer (I save the rest for another sandwich another time... it lasts around 3 days in the fridge). Transfer the foil with the bread slices directly onto a cookie sheet. Place a slice of the cheese on top of each. Place in COLD oven, middle rack, and turn on the broiler to 500F. It usually takes less than 5 minutes for the bread to toast and cheese to melt. It's awesome because the spinach just barely steams, the tomatoes and onions get rid of the raw taste and the bread is toasted. The cheese seals in all the good flavor. Sometimes I dip it in yellow mustard, which my SO thinks is disgusting. He uses a Peruvian Sauce you can only get in North Florida for now. And, I serve it with mini dill pickles. Cause I'm weird like that. Quick, easy, after-workout meal.
