Pinwheel Salmon
serves 1
2 wooden skewers soaked in water for about 30 minutes (next time i do this, I want to use rosemary branches.. i think it would give some interesting flavor) 1 salmon filet cut into 1 inch strips (the piece i used was about 1/2 a pound, I picked a fairly thin piece that was long I was able to get 5 inch strip.) juice of 1 lemon, plus zest splash of olive oil 2 cloves of garlic, minced (I like a lot of garlic, if you don't, cut back to 1 clove) pepper salt if desired 3 tbs minced parsley Marinate salmon filets, while skewers are soaking in lemon juice, olive oil, 1 clove of garlicc and salt and pepper (if you are using salt)toss the marinade in a glass pie pan, and let the fish sit in it for a bit.) Mix lemon zest, parsley, and remaining garlic togetherso that it's pastey. Remove salmon from marinade,and on the skin side of the salmon, put some of the parsley paste... very carefully, twirl t he salmon filet into a pinwheel (a circle) and skewer the salmon circle. I used two circles on one skewer, 3 on the other. Now grill the salmon skewers for about 4 minutes per side, or until it looks like it's done... (i used a grill pan... outdoor grill woudl be better if i had one of those.. ) Remove skewers from the pinwheels and enjoy..

Seaming that I have yet to eat today, I am drooling a bit, this sounds wonderful. I think I am ready to start eating fish again after all the rock cod I got, this is defiantly a possibility for my next salmon dish, thanks.
Also about the rosemary, I’d think the branches would be too flexible to use, but would be awesome if it worked, good luck, maybe using a skewer and a branch at the same time, one for flavor one for strength.

i haven't quite figure out how to do it with the salmon - it just seemed like an interesting alternative... though my next skewered dish will be lamb on rosemary branches that seems to go together really well

lamb and rosemary is wonderful, but my favorite lab recipe is marinating a leg of lamb in red wine, red onion, and mint for a few days, cooking the lamb in the oven slow and low, and taking the marinade and reducing it on the stove all the while so you get a thick red wine mint syrup as a sauce. Marinating for 5 days gives you an incredibly tender piece of meat; you don’t even need a knife to eat it. (The only good part of being canceled on for a date.)
For the rosemary and salmon, maybe if you got enough, you could make a bed of rosemary and cooked it on top of that in the BBQ, you'd need to have presoaked the rosemary so they don’t burn, but you could incorporate a lemon, and maybe a white wine into the water to get some more flavor into the salmon.

I had cous cous made with chicken stock instead of water, and simmered garlic in the stock... so it was really garlicy... then i just tossed in some sweet peas and chopped up parsley.
(I made it again the other night, and didn't pinwheel it - i just put in in a baking dish and put it n the oven for about 15 minutes... and it was superb.)
