2 wooden skewers soaked in water for about 30 minutes
(next time i do this, I want to use rosemary branches.. i think it would give some interesting flavor)
1 salmon filet cut into 1 inch strips (the piece i used was about 1/2 a pound, I picked a fairly thin piece that was long I was able to get 5 inch strip.)
juice of 1 lemon, plus zest
splash of olive oil
2 cloves of garlic, minced (I like a lot of garlic, if you don't, cut back to 1 clove)
pepper
salt if desired
3 tbs minced parsley
Marinate salmon filets, while skewers are soaking in lemon juice, olive oil, 1 clove of garlicc and salt and pepper (if you are using salt)toss the marinade in a glass pie pan, and let the fish sit in it for a bit.)
Mix lemon zest, parsley, and remaining garlic togetherso that it's pastey.
Remove salmon from marinade,and on the skin side of the salmon, put some of the parsley paste... very carefully, twirl t he salmon filet into a pinwheel (a circle) and skewer the salmon circle.
I used two circles on one skewer, 3 on the other.
Now grill the salmon skewers for about 4 minutes per side, or until it looks like it's done... (i used a grill pan... outdoor grill woudl be better if i had one of those..
)
Remove skewers from the pinwheels and enjoy..
