INHO, Mandrake is probably the easiest, or maybe RedHat if you want simplicity of installation/setup.
And you can interconnect Windows and Linux. Check out Samba for file sharing, or just use something like FTP for simple file sharing. Like Mr. Mephisto said, you should check out the basic linux websites to get some insight into what linus is, and what it can do. Also, you might want to grab a copy of Running Linux from Oreiley.
