Make risotto and add tiny bits of cooked broccoli to it at the end Serve with white wine:
heat 3-4 C veg or chicken broth, if you have some saffron add it to the hot, but not boiling water saute a clove of garlic with some shallots or onion in olive oil add a cup of aborio rice, cook for couple min add 1/4 - 1/2 cup white wine and stir till most of it is absorbed add 1 ladle of broth at a time stirring intermittently (right after you add and every min or so after) till most of the liquid is absorbed, repeat till you have the right firmness of the rice add 1/2 stick butter (chop it small so that it melts quick), 1/4 - 1/2 C parm cheese (your preference, start with 1/4C and see how you like it), and 1/4 parsley or basil (if you have it, not necessary), salt, pepper, and some steamed broccoli |
