Looking for real , good Jerky

Hi all,
ONe time in band camp..
Just kidding.

However
a friend of mine a few years back killed a dear and made some of the most incredible peppered Jerky I ever had and have been craving it since.

Where can I find real Jerky not some stuff processed in a factory but one that a butcher made?
Im looking for either Venison or Beef.
Peppered.
I found a bunch of web sites but have no Idea hich is good or not.

Try making your own. It's not hard and you can develope a taste that you like.
it's a hell of a lot cheaper too

I just watched a Good Eats episode on making jerky. I liked the curing stage; he used cheap furnace air filters and strapped them together over a window fan.

Tillamook Country Smoker is a local company that makes some of the best natural beef jerky I've ever had. I buy a pack every time I go to the grocery store. Beats the pants off of Oh Boy Oberto and other jerky brands--it's not dry like most commercial jerkies but rather chewy and moist instead (like Alton Brown's jerky recipe would make). I personally love the teriyaki but they have all kinds

Jerky is OK, but having lived a large part of my life in South Africa, I'd say that if you liked Jerky then you will love something that the South Africans call 'Biltong'.

check your local yellow pages or internet for ex-pat south africans. They'll always have a store somewhere where they can get old country stuff.

It's usually in bigger chunks than jerky. As you say you liked it peppery, they usually bathe it in crushed peppercorns. Very tasty.
It's like crack for meat lovers.

making jerky is SOOO MAD EASY to do. Get you some cure/seasoning marinate it overnight and put it in a dehydrator or on a low oven and good to go.

also I used to be a regular shopper on http://www.himtnjerky.com/ and their stuff is MM MMM good, with easy instructions and a nice selection of different seasonings and cures, not to mention they also have a full line of general seasonings for all your meat seafood and poultry needs, highly recommended.

Chauncey, next time I'm upstate (NY), I'll buy you some and mail it to you. We get it at this butcher shop in North Creek, NY - it's tender and juicy and awesome. Just don't let it sit around too long, it dries out overquick. They have plain, teriyaki, and hot (crushed red pepper, yummy!). Seriously. PM or Email me with an address, or I can get the contact info for you if you're ever north of Albany NY. It's gooooood.

ASk and you shall receive!, 2 weeks ago I was sitting in this very seat wanting some Good Jerky and lo and Behold I got some!!!!

Thank you all fo ryour suggestions and Thank you Just Jess who picked me up some from upstate NY.

Very Tasty and am just about done with the first bag!

(Love the after taste) did get a littel dry though. Much better then what I get out here.

That's where I buy my jerky from. I normally make a run or two up a year to Clifton, ID (about a four hour drive) just to pick some up.

It's good stuff, and aparently, they have free shipping right now, which seems pretty good.

My favorite from there is the peppered. They are pretty big meaty strips, with a good amount of moisture still left in them.

ebay is the best place to find small-time jerky sellers.

you'll often find sportsmen or butchers who will smoke local meats and sell it in small volumes over auction sites. i forget the name, but my friend swears by a man in Washington state who sells jerky every once in a while.
