Quick and Easy Veg recipes?

I'm supposed to be cooking dinner tonite for a girl I really like. The problem is she happens to be vegetarian because of medical reasons, and I'm not that experienced when cooking things other than bloody rare red meat.

Any ideas of tasty, easy, good recipes I could use here? I really want to impress her with my cooking skills as I've been bragging about them already, just not with vegetables, hehe...

Stir-fry! Super-easy way to cook up lots of vegetables. Cabbage, carrots, snow peas, broccoli, etc...everything can go in stir-fry. A veggie soup is also good.

One thing I like to do with a stir-fry is marinate tofu to put in it--teriyaki tofu is delicious. Mmm.

Try a chop salad (you American's are good at those eh?) or tabbouleh. Both very tasty, easy to make but do require lots of ingredients.

Chop salad - gem lettuce, iceberg lettuce, red onion, cucumber, feta cheese, blue cheese, capsicum, parsley/coriander/basil, tomatoes, vinegrette (4 parts oil, 1 part white wine/cider vinegar, salt and pepper, mustard - mix well). Chop all ingredients small and mix with dressing. You can leave out some ingredients if you like.

Tabbouleh - Use bulgar wheat or cous cous, cook in stock as per instructions. Essential ingredients are cucumber, mint and lemon juice. You can also add tomato and coriander (cilantro). Chop up all the ingredients quite small. Mix it all up with a glug of olive oil and season.

She okay with pasta? If so, do a spinach lasagne if you've got the time for prep. Lasagne's easy, it's all slicing, chopping, assembly, and baking. There are recipes everywhere, but if you don't have the time to look just thaw some frozen chopped spinach and put in a couple of layers along with the cheese, pasta, sauce, and what have you.

Following Rodney's idea of a spinach lasagna, I actually made one this past week for my fiance, who's a veg.

The ingrediants I had were one package of frozen spinach, one box of no-bake lasagna noodles, 1 bottle of Bertolli tomato sauce, 1 large(r) container of ricotta cheese, a 500g bag of shredded cheese (containing parmesan, white cheddar, mozzarella and provolone), italian herb mix, and some flavouring tomatoes (kinda like a mix between cherry and plum tomatoes).

Defrost the spinach.
Once it's defrosted, squeeze out all the water, and incorporate it into the ricotta.
Take a lasagna pan, and pour enough sauce on the bottom of the pan to coat, and lay some of the lasagna noodles on top.
Spread half of the ricotta mixture on top of the noodles, and pour some more sauce over the ricotta.
Sprinkle with herbs, and lay down another layer of noodles.
Spread the rest of the ricotta, pour some more sauce, and sprinkle with herbs.
Sprinkle a little cheese over top, and cover with the last layer of noodles.
Spread on top the rest of the sauce, and the sliced tomatoes.
Sprinkle with herbs, cover with the rest of the shredded cheese, and some herbs.
Cover with aluminum foil, and bake at 350 degrees for about 30 minutes.
Take off the foil, and broil for another 5 minutes.

Another thing you can do if you can find chik'n patties is make veggie chicken parmesan.
