I go for easy
Swedish Meatballs (served in a crockpot)
Hot artichoke cheese dip (2 cans of artichokes (drained), ripped apart in a food processor -- a dollop of mayo, and about 1 1/2 cups of parmesean cheese -- bake at 400 for about 20 minutes.

Dips and chips
Nachos

Coldcuts and assorted rolls
Salads

these two are standards I use for every party I have and no matter what else I've fixed there are never ANY left

sausage balls (made with bisquick and shredded cheese and sausage)

and cocktail weenies wrapped in crescent dinner rolls that have a layer of cheeze wiz spred on them (I take one crescent roll triangle and cut it in half so a can of 8 rolls will yeild 16 pigs in a blanket) cooked at temp/time according to the roll package

try mexican salsa/queso dip. easy to make, and very tasty. all you do is mix salsa if you don't feel like making it with mexican velvetta cheese. served warm, will be a perfect addition to your new year's eve party.

you can also fry up some ground round to add to that, if ya want it a bit meatier.
(be sure to drain the grease off the meat).

oh & don't forget the side dish of tortilla chips!

this has always been a big hit at our parties

7-layer, 9-layer, how many ever layers... dip

take a large baking dish
line bottom of dish w/refried beans
layer of finely torn lettuce
layer of diced tomatoes
layer of sliced green onions
layer of chopped cilatro
layer of sour cream
layer of grated cheese (colby-jack or a 4-cheese mexican sort works well)
layer of jalapeno slices (unless you are serving a mixed crowd of fire eaters & whimps, then omit this layer)
layer guacomole*
garnish with a dollop of sour cream in the center, sprigs of cilantro to line the edges of the dish, make some decorative pattern with black olives & jalapeno slices (or just pile these each beside of the sour cream dollop)
stick a sprig of cilantro & a black olive (or cherry tomato) in center of sour cream

variation: you can omit the diced tomato layer altogether & put halved cherry tomatoes on top for a more colorful presentation or you can substitute red salsa for this layer. and of course, you can eliminate any layers you wish.

(the layers can pretty much go in any order, but that order works well)

refrigerate until ready to serve.

again. serve with tortilla chips.

*guacamole
mash 3-4 haas avocados
squeeze a bit of fresh lemon juice (to keep avocados from browning)
add garlic powder, salt & pepper to taste
add a small can or half jar of green salsa (the kind made w/tomatillo)
add enough sour cream to make it creamy, but be careful not to go overboard
stir. voila!

lil smokies in bbq sauce and beer, nice and easy
cold cuts/veggie platter
chips and dip
Prosciutto-Wrapped Breadsticks (one I just tried for the holidays)http://www.foodtv.com/food/recipes/r..._25310,00.html
sweedish meatballs

I am a fan of the finger foods, much easier and easier clean up, since you can prepare many of them well before guests arive.

spanikopita and dolmas are good finger foods. I like to do a variety of cheeses with crusty breads. Olives are quick and easy too. Bruchetta is fun. Good luck

Quick and easy--

Take a brick of cream cheese. Cover it in baby shrimp. Pour cocktail sauce over the top. Serve with Ritz crackers.

Stuffed mushrooms are always good.

Brie en croute can easily be done with a wheel of brie and some puff pastry.

Check out Better Homes and Gardens' website here, they have a bunch of appetizer recipes:
