The bellini, is said to have originated in Harry's Bar at the Hotel Cipriani in Venice, opened by Giuseppe Cipriani in 1931. Supposedly Ernest Hemingway was a regular.
The drink is the Bellini, a mixture of white peach juice and sparkling prosecco, named after the fifteenth-century Venetian painter Giovanni Bellini I have only had it for a brunch type drink where it's one part peach schnapps and 3 parts champagne -- served in a champagne glass. The authentic recipe: http://www.epicurious.com/drinking/d.../views/200835/ \This recipe is adapted from that of Walter Bolzonella, barman of the Hotel Cipriani in Venice. For the peach purée: 1/2 cup water 1/4 cup lemon juice 1/2 to 3/4 pound ripe white peaches 2 teaspoons sugar For the drinks: A few raspberries, if desired, for color. 1 bottle Prosecco sparkling wine, preferably Nino Franco Pour cold peach purée into a pitcher. Add one bottle of chilled Prosecco sparkling wine and stir gently. Pour into glasses and drink at once. Serves 2. \
