The bellini, is said to have originated in Harry's Bar at the Hotel Cipriani in Venice, opened by Giuseppe Cipriani in 1931. Supposedly Ernest Hemingway was a regular.
The drink is the Bellini, a mixture of white peach juice and sparkling prosecco, named after the fifteenth-century Venetian painter Giovanni Bellini
I have only had it for a brunch type drink where it's one part peach schnapps and 3 parts champagne -- served in a champagne glass.
