Garlic Mashed Potatoes

Ingredients
2 Tbsp. olive oil
3 cloves garlic, peeled and finely chopped
1 tsp. Italian seasoning or dressing
4 cups water
2 medium potatoes, cubed (peeled or unpeeled)
1 can (10 oz) condensed potato soup
salt and white pepper

Preparation
Sauté garlic and Italian seasoning in olive oil for 3 minutes.

Add water and potatoes and bring to a boil.

Reduce heat and simmer about 20 minutes until potatoes are mushy.

Drain and return to pot.

Add soup and mash potatoes to desired consistency.

Add salt and white pepper to taste.

Thanks Jadzia, I've been looking for a good way to garlicize my mashed potatoes. Might experiment with different dressings to optimize the garlicness.

I hafta confess, I've never thrown soup into my mashed potato, usually only use milk.
