Recipe of the Day - May 21 (garlic mashed potatoes)
Garlic Mashed Potatoes
Ingredients
2 Tbsp. olive oil
3 cloves garlic, peeled and finely chopped
1 tsp. Italian seasoning or dressing
4 cups water
2 medium potatoes, cubed (peeled or unpeeled)
1 can (10 oz) condensed potato soup
salt and white pepper
Preparation
Sauté garlic and Italian seasoning in olive oil for 3 minutes.
Add water and potatoes and bring to a boil.
Reduce heat and simmer about 20 minutes until potatoes are mushy.
Drain and return to pot.
Add soup and mash potatoes to desired consistency.
Add salt and white pepper to taste.
