I'm definitely trying this chili once the weather gets a little cooler. You can't beat a warm bowl of chili in the cold weather.

I made this for my cookoff, and it was very good, but it didn't even place. I think I need to cook it a few more times before I get the hang of it. The bottom of the pot was bunt a bit, might have affected the taste.

Hankster: how small do you chop up the london broil & the pork before cooking?

the broil and the pork i put in the freezer for maybe 20 minutes - slice into 3/8" pieces across the bias against the grain (at a slant) then slice again the opposite direction so they're about the size of a peanut M&M

two things come to mind about the burnt pan bottom... the tail end of the cooking you want to go LOW AND SLOW... this allows the flavors to MARRY as it were...

also, make sure you're using a double bottom pot... i mean a thick aluminum claid bottom so the heat distributes evenly... if you are using gas it may run hotter than electric...

i'm sorry it didn't work out for ya' but in cook-offs there are plenty of folks that place second... no one is a loser!!!

Hanxter, you have more fans of your chili!
I cooked up a batch for the first time on Sunday and brought it in for everyone at work today. Everyone loved it! Even the one guy who doesn't like "hot" food said he really enjoyed it.

I only made a few changes. I added a few good grinds of sea salt at the beginning (when adding tomato paste to meats), I'm not a fan of pinto beans so I used Brook's brand hot chili beans, and I couldn't find med-hot chilis so I used a small can of mild green chilis and about a 1 1/2 Tbs. of jalapenos.

I tried this again for my Superbowl party, with some minor tweaks, a better BBQ & hot sauce and a much better pot. It turned out fan-tas-tic! I had a feeling I needed another chance to get it right, and I was correct. Rave reviews all around. Thanks Hanxster!
