What to do with 20 lbs of ground venison
When searching for some good venison recipes, I came across http://www.nodakoutdoors.com/venison-recipe.php, the basics in making venison sausage.
There are also some ideas in the thread Venison ideas? where I posted two recipes from an episode of Emeril Live! that was dedicated to venison. and then there is this simple recipe that can be dressed up with the spices of your choice: Ingredients 8 pounds ground venison 2 pounds lean ground pork 6 Tablespoons tender quick 1 Tablespoon white pepper 6 ounces corn syrup solids 6 Tablespoons onion powder 1 Tablespoon nutmeg 2 cups powdered milk 2 Tablespoons sage 1 Tablespoon black pepper Preparation Mix well (better to run through the grinder) and put in casings or keep loose. Fry in cast iron skillet until done. Makes 10 pounds. |

I normaly take it and add it to the sausage that I make. Will post my recipe. You can add as much as you like.

here's one i made when my good lady and i got home late from the club...
1 lb vennison burger 1 can corn beef hash 2 stalks celery chopped 1 small onion chopped 1 large clove garlic pressed 4 GOOD dashes worcestershire 2 - 3 tbsp dry basil 1/4 c bread crumbs in a glass bowl combine all the ingrediants with 2 - 3 tbsp dry basil crushed in the palms of your hand yes - you are making a meat loaf!!! bake at 350 for an hour and let sit for 10 minutes before carving leftover sandwiches are great with creamy horseradish sauce instead of mayo |
