and then there is this simple recipe that can be dressed up with the spices of your choice:
Ingredients
8 pounds ground venison
2 pounds lean ground pork
6 Tablespoons tender quick
1 Tablespoon white pepper
6 ounces corn syrup solids
6 Tablespoons onion powder
1 Tablespoon nutmeg
2 cups powdered milk
2 Tablespoons sage
1 Tablespoon black pepper
Preparation
Mix well (better to run through the grinder) and put in casings or keep loose.
Fry in cast iron skillet until done.
Makes 10 pounds.
