Chocolate + Coffee= Mocha/Nectar of the Gods
Mochas
Basic Equipment: Espresso machine (with steam nozzle) Stainless steel frothing pitcher 12 oz. Glass White Mocha Ingredients: 1 shot (2 oz) espresso 8 oz. (1 cup) milk 3/4 oz. (4 ½ teaspoons) white mocha chocolate Whipped Cream Chocolate Sprinkles Procedure: Put the white mocha chocolate into the glass. Make the espresso and steam the milk. Pour the espresso and milk into the glass. Stir. Top with whipped cream and chocolate sprinkles. Mocha Ingredients: 1 shot (2 oz) espresso 8 oz. (1 cup) milk 3/4 oz. (4 ½ teaspoons) mocha chocolate* Whipped Cream Chocolate Sprinkles *Mocha chocolate can be substituted by Hershey’s chocolate syrup. Procedure: Put the mocha chocolate into the glass. Make the espresso and steam the milk. Pour the espresso and milk into the glass. Stir. Top with whipped cream and chocolate sprinkles. Mocha Mint Ingredients: 1 shot (2 oz) espresso 8 oz. (1 cup) milk 3/4 oz. (4 ½ teaspoons) mocha chocolate* ¾ oz. (4 ½ tsp.) Mint Flavouring Syrup Whipped Cream Hershey’s Chocolate Syrup *Mocha chocolate can be substituted by Hershey’s chocolate syrup. Procedure: Put the mocha chocolate and mint syrup into the glass. Make the espresso and steam the milk. Pour the espresso and milk into the glass. Stir. Top with whipped cream and pour chocolate syrup on top. Variations: ICED MOCHA MINT: Begin by filling glass with ice, then follow the rest of the recipe. Irish Mocha Ingredients: 1 shot (2 oz) espresso 4 oz. (1/2 cup) milk 3/4 oz. (4 ½ teaspoons) mocha chocolate* 1/3 oz. (2 teaspoons) Irish Cream syrup Whipped Cream Chocolate Sprinkles *Mocha chocolate can be substituted by Hershey’s chocolate syrup. Procedure: Put the mocha chocolate and Irish Cream syrup into the glass. Make the espresso and steam the milk. Pour the espresso and milk into the glass. Stir. Top with whipped cream and chocolate sprinkles. |

as a modification,
put milk in glass first and mix mocha spoon foam (from steamed milk) on top slowly pour espresso onto foam. if all went well it is now a layered mocha serve in a clear mug/glass, charge $4.50 since now it is artsy |

there are some other things that can be done, but will not turn out the same. as far as frothing, or getting foam indicative of a Late or Capucinno, it can only be done with cold milk, a hand wand blender at the surface will do this. Also the milk can be heated up in the microwave, however the total effect is not quite the same. I have not tried frothing milk with a blender and then heating in the microwave, might be a two step process?

I was wondering about the Hershey's syrup, thank's for confirming that it is functionally equivalent to the syrup in coffee bars. I just add it to regular coffee rather than adding sugar, it works well.
