dredge the wings in flour and let them sit in the fridge for about an hour. Take em out, and dredge em again, then toss in the fryer. Always makes mine ultra crispy. If you want to go lighter on the sauce, you can up the amount of pepper you put in with the flour, but hot wings ain't hot wings without the sauce.

Try this one out... BBQ your wings over a low flame keep an eye on them and keep turning them over. They'll start to get crispy and then add the sauce...
...take a can of chipotle peppers in adobo sauce and put it in the blender, use the can and pour in white vinegar ( a little less than a full can), then add asome honey ( i dont know how much, i cook by the seat of my pants), blend, the longer you blend it the hotter the suce gets because you start to break up the seeds... ...after you add the sauce to one side let it cook for a few minutes then flip the wings and coat that side. If youre feeling really adventurous, add some fresh mango, cilantro, and garlic (spicy pickled garlic if you can find it) to the sauce before you blend it. enjoy... |
