perfect roast potato

I cooked xmas dinner for my family this year (well, a part of it which I still talk to) and it came out really good. This is the roast potato recipe I used (which I copped from a Nigella Lawson book) It's really good. My instructions might not be traditional, but hopefully clear.

First off, peel the potato's, then leave them in salted cold water. Do this 2 hours before the meal is served

90 mins before the meal is served, pour like 400 ml (a normal can size) goose fat into a roasting tin, put in the ovening at like 250 Celcius UNCOVERED. You need to get the temp of the fat like molten...this should take 30 mins

Now you need to time this so your potato's parboil for 4 mins just in time for 1 hour before the meal, cos thats how long they roast for.

Put them on the hob and bring the cold water up to boil. You want it to be boiling at a nice level for only 4 mins. Then drain the water off, keep the potato's in the same pan and tip in about 3 tbsp of dried semolina. Put the lid on the pan and shake it about a bit. You want to rough the potato's up but not smash them to pieces. Ideally you wanna time it so there roughly ready to go straight in the oil, but if they have to stand there 10 mins just cover the pan to keep the heat on them, it wont hurt them.

Now, you take out your oil, which is bubbling hot in the baking tin.

CAREFULLY lower in the potato's and put them back in the oven at 250 in a covered baking tin.

After 30 mins take them out and turn them over, make sure they are all drizzled in all all over, etc

Give them another 30 mins, covered again, at 250 still.

Take them out and put them in a warm serving dish. After a few mins to cool, you have the perfect recipe.

Nigella worded it a bit nicer, but thats basically following what she said and I can say from experience they are bloody delicious.

I normally do it your way, but Michael Caine was on Desert Island Disks last week and he mentioned how he makes perfect roasties.

Not tried it myself, but it made perfect sense.

Peel and boil potatoes.

Drain them and allow them to steam themselves dry and cold.

Cover them with olive oil and crushed fresh rosemary.

Put them into the oven with the meat.

Remove when golden.

I add chopped onions too, and let the fresh rosemary sit in the olive oil before pouring over potatoes so none of it burns or gets bitter.

I've got that Nigella book too. I've used her method a few times - they come out really good!
