How to put carrot fiber (from juicer) to use?
I use alot of carrots in the juicer. One pound makes only a cup of juice, so you can imagine how much fiber I am left with.

carrot cake
carrot muffins bran muffins (adding in the carrot pulp) you could probably add it to spaghetti sauce as well, it's give it a sweetness, but it's really no different than adding other vegetables to the sauce. I would just make sure that you peel the carrots before juicing them...

any cake, muffin, or sweet bread recipe. It is a good thing to toss into vegetable soups to bulk them up, cream soups can take them too if the color dosent bother you. if you drink yougurt smoothies at all, you can toss some in there.
you can also: 4 cups carrot pulp 1/2 stick of butter 1 large white onion, grated (food processor - dont try the box grater) 2 cups left over mashed potatoes (or parsnips, or turnips) one egg 1tbsp milk 2/3 cup seasoned breadcrumbs, 1/3 cup reserved 2 cups grated cheese, 2/3 cup reserved 1/2 tsp salt 1/4 tsp pepper olive oil beat all ingredients together until well incorporated, spoon into pyrex baking dish, top with reserved breadcrumbs and shredded cheese. drizzle with olive oil and bake in 350F oven until golden. |
