Canned Salmon--any ideas?

It occurs to me that I should eat more salmon, basically because its good for you, especially the skin and bones. But I hate eating it plain. Does anyone have a recipe or ideas for making canned salmon more tasty?

Italian Salmon Caesar Salad

15 Minute Meal

1 package (10 oz.) fresh Caesar salad kit (including lettuce, dressing and croutons)
1 jar (6.5 oz.) marinated artichoke hearts, undrained
1/2 cup halved Kalamata olives or 1 can (4.25 oz.) sliced ripe olives, drained
1 small red, orange, or yellow bell pepper, cored and cut in 2-inch strips
1 can or pouch (6 to 7.5 oz.) Alaska salmon, drained and chunked
1/4 cup shredded Parmesan cheese (if cheese is not provided in kit)

Dressing: In a small bowl, blend Caesar salad dressing and liquid from artichoke hearts.

Salad: Place lettuce from salad kit into large bowl. Add chopped artichokes, olives, pepper strips, and salmon. Just before serving, pour dressing over salad; toss gently. Top each serving with cheese.

Makes 2 main course or 4 side dish servings.

Nutrients per serving (as side dish): 286 calories, 20g total fat, 4.5g saturated fat, 61% of calories from fat, 41mg cholesterol, 16g protein, 12g carbohydrate, 4g fiber, 1115mg sodium, 214mg calcium and 1.2g omega-3 fatty acids

ALASKA SALMON MELTS

15 Minute Meal

1 can (14.75 oz.) or 2 cans (7.5 oz. each) traditional pack Alaska salmon OR 2 cans or pouches (6 to 7.1 oz. each) skinless, boneless salmon, drained and chunked
1/3 cup low-fat mayonnaise
1 teaspoon dried parsley
1 teaspoon lemon juice
1/2 teaspoon seasoned salt
1/4 teaspoon celery seed
1 cup shredded Cheddar cheese, divided
3 to 4 English muffins, split

Spread: Mix salmon with mayonnaise, parsley, lemon juice, seasoned salt, and celery seed. Stir in 1/2 cup cheese.

Sandwich: Set oven to broil. Lightly toast cut side of muffins on baking sheet about 5 inches from heat. Spoon 1/4 cup salmon mixture (for 8 servings) or 1/3 cup (for 6 servings) onto each toasted muffin half. Top with remaining cheese. Broil 3 to 4 minutes until cheese melts and is lightly browned.

Variations: Substitute shredded pepper-jack OR Swiss cheese for Cheddar.

Makes 6 to 8 servings.

Nutrients per serving: 262 calories, 16g total fat, 5g saturated fat, 54% of calories from fat, 48mg cholesterol, 17g protein, 13g carbohydrate, 1g fiber, 643mg sodium, 227mg calcium and 1g omega-3 fatty acids.

Yum, makes me hungry! I love Salmon!

My dad has a recipe for salmon salad. As I recall, it involves boiled potatoes, a bag of mixed salad, a can of salmon, and mayonnaise with salt and pepper. I'll have to ask him what else is in it. I really like it. It sounds a bit odd but it's actually quite tasty.

canned salmon is pretty gross and really bears no resemblance to fresh salmon... you really want to bury it with other things - like salmon patties or something to kill the taste of it...

exactly my point,,,so are you saying I can make patties that I can fry in the pan? What, egg and bread crumbs?

Salmon Croquettes...
1 12 oz pink salmon
2 eggs
1/4 cup onion, chopped fine
2 cloves garlic, minced
handful of all purpose flour
2 tablespoons yellow corn meal
1/2 teaspoon ground black pepper
1 tsp parsley flakes
1/2 tsp thyme
1/2 tsp rosemary

Mash all the ingredients together, adding flour last because sometimes you need more than others.
Shape the mixture into patties - like hamburgers

Put some cooking spray into a medium hot skillet - and put in patties... cook about 5 - 7 minutes on each side til lightly browned.

herbs and spices can be varied depending on what you like and what you have... I'm on a curry kick lately and as i'm typing this i'mthinking ooh curry would bea nice addition instead of the rosemary and thyme

Salmon Pizza- use ready made dough/Boboli, favorite sauce, top with cheese and canned salmon and there you go. Great stuff, really.

real salmon is just as good for you- and actually tastes good.. I'm sure that dog food is quite nutritious but i haveno desire to eat that.. Liver is also good for you.. and well .. that's sooo not gonna happen anymore..

I've made salmon patties before. I don't really have a recipe, but I used saltine crackers crushed and a couple eggs. Mush it all together, make patties and pan fry in veggie oil. They taste pretty good with lemon juice. Mackerel (spelling?) is also good for patties.
