London Broil With A Vinaigrette
2 London broil or flat iron steaks - well trimmed - about 1-1/2 to 2 pounds each
the mainade... 1 cup soy sauce 1 cup mirin (sweet sake) 1 tablespoon chopped ginger 2 tablespoons sesame oil 2 cups chopped scallions 1 tablespoon dried red chile flakes 2 to 3 garlic cloves, finely chopped the vinaigrette... 1 tablespoon honey 1/2 tablespoon chopped ginger 1/4 cup each of coarsely chopped mint, cilantro and parsley 1 cup peanut oil 1/2 cup rice wine vinegar 1 egg yolk kosher salt fresh ground black pepper in a bowl combine all the marinade ingredients - pour over the steaks and let them marinate covered with plastic wrap at room temp for 1 hour while the meat is sitting, combine all the ingredients for the vinaigrette except the oil and blend until smooth - now - SLOWLY add peanut oil - season with salt and pepper and pour into a bowl season the meat with pepper - NO salt - and place the meat on a pre-heated grill for about 5 minutes per side for medium rare remove from the grill and let stand for about 10 minutes slice the steaks thin at an angle across the grain and serve with the vinaigrette on the side serves maybe 6 Last edited by Hanxter; 05-19-2006 at 05:16 AM.. |
