Zucchini Pie
Wanted something different last night for dinner, and wanted to use up some zucchini that was a day away from turning bad- and well - I wasn't in the mood for anything with tomato sauce... so... I kinda made a quichey type thing and it tasted pretty good (and will taste good again for lunch)
This was a variation of a recipe I found onthe web that called for bacon in place of the mushrooms, I love bacon, but i like mushrooms more) and didn't call for cheese... They also listed it as a breakfast entry... Ingredients 1 pie crust (I have absolutely no pie crust making ability, just dont have the patience for it -- Pillsbury makes a nice ready pie crust that you just unroll and drop in a pie plate.) Put the crust in the pie plate - and stab it with a for a few times. bake at 400 for about 5 minutes til very lightly browned. NOW the filling 6 eggs, beaten 3 zucchini, shredded 1 cup of mushrooms, chopped 1/2 shredded onion 1 cup of shredded fontina cheese (Swiss, mozarella, etc would also work) (the zucchini, onion, mushrooms, and cheese all went thru the food processor) Mix together all ingredients and season appropriately (I added lots of black pepper, and used Mrs Dash's Salt free chicken grill seasoning) and some fresh parsley. Pour the ingredients into the pie shell Cook in 400 degree oven til the eggs are set. (basically til a knife inserted comes out cleanly) (my oven is bizarre, it takes things really long to cook, the original recipe said 20 minutes, it took about 40 minutes in my oven) Wait for it to cool a little bit... slice and serve and enjoy...

This pretty much seems like what I'd call a zucchini quiche! Sounds pretty good, will try it. It also reminds of another favourite of mine with this type of vegetable...

That sounds great, adding a bit of cream to the eggs would make them rich and fluffy; I love zucchini, especially zucchini bread. sliced Zucchini with salt, pepper, olive oil barbequed on the grill is wonderful, try it if you've never had it. As for your oven, have you stuck a thermometer in it and checked it real temp? My oven is off by 50F I have to set it 50F hotter then what I want. Yours may be way off.
