Tortellini Soup
So I was poking around the kitchen trying to find something to make for lunch. After looking at what we had, I came up with this:
Tortellini Soup 1 half sweet onion, diced 1 red bell pepper, diced 2 carrots, diced 3 cloves garlic 2 tbsp extra virgin olive oil 1 can diced tomatoes 3 tbsp tomato paste 2 cups water 1 can kidney beans 2 handfuls frozen tortellini spices to taste Saute onion, pepper, and carrots until soft; add garlic and season with salt and pepper. Add can of diced tomatoes, tomato paste, and water. Add seasonings to taste: basil, oregano, cayenne pepper, and a touch of marjoram. Heat through before adding can of kidney beans with liquid. Bring up to a boil before adding tortellini; cover, reduce heat, and simmer for ten minutes. Reseason if necessary. It turned out really well if I do say so myself.

I love pantry dinners... no grocery shopping needed...
try some frozen whole leaf spinach in it (or even better fresh- or even some green leafy veggies in it for some additional body and flavor...)
