Hmm, ya most of the time the preservatives arent to great for you, I go to Vons, and as I understand their turkey/chicken is pretty good for you, I may be wrong however, I never really gain sodium weight from their turkey after I eat it. I asked the guy at the deli whos a friend and he said its 98% fat free and low in sodium, also they dont make it outta the gelatine cubes like most places they get new turkey/chicken every day or 2 days and its fresh so they dont need the gelatine, or at least thats what they do here.
Cooking the chicken/turkey before would work however the main issue is most of the time it tastes better heated and alot of us lack a microwave hehe.
Good to see your making healthy alternatives, isnt much advice I can really give except eat alot of veggies/meats for healthy eating, and keep track of sauces etc, only use a sauce if you know your gonna run short on calories in the day. (however fish oils/flaxseed oils/olive oil is good to have a bit of in a day since its the best fat you can get)
